DIY Healthy Christmas cookies

There is something really special in the air before Christmas. A special kind of scent (and this is not just about the smell of mulled wines from the Christmas market) it is a time when you have a rush of some kind of magical energy. In order to keep that energy level up, and especially during festive euphoria, a good sleep is needed, but also intake of quality foods into the body.

We are advocates of a healthy lifestyle, and this includes healthy nutrition. The festive season that come to us bring a lot of heavy and caloric food to our table, so if you are considering an alternative to prepare something healthy and tasty, continue to read this post.

In truth, we all love desserts, especially kids who like to take part while making cookies. Our Proposal No.1 COOKIES WITH GINGER AND CINNAMON

Ingredients you will need for this recipe:

 

  •         Half cup of unrefined sugar
  •         1 teaspoon ginger powder
  •         1 teaspoon of cinnamon
  •         1 ½ and a half teaspoon of baking soda
  •         Half cup of molasses
  •         Half a cup of soy milk
  •         2 ½   cup of integral flour
  •         Pinch of salt
  •           Moulds for cakes in the form of Christmas trees, snowman, snowflakes
  •           (if you do not have this type of mould, you can use a glass)

Preparation:

Mix sugar, ginger, and baking soda in bowl. Then pour molasses and soy milk and mix well. Finally, stir with the food mixer gradually flour. Allow the dough mixture to rest in the fridge for half an hour.

Rested dough put on the surface with flour and roll it out. The more you roll it, the cookies will be crispier, but do not make it thinner than half a centimetre.

Take the mould and make cookies from dough. Bake them for about 20 minutes at 170 degrees.

When cooked leave them to cool down, if you like you can sprinkle them with icing sugar, to create a “snowy -wintery look”.

 

Our Proposal No. 2VEGAN CHOCOLATE BALLS (satisfies tasty flavours for those that are not vegans)

Ingredients you will need for this recipe:

 

  •         240gr Vegan cream cheese
  •         2 cups of unrefined sugar
  •           2 cups of dark chocolate
  •           (more percentage of cocoa in chocolate the taste would be better)
  •         Ground almonds, walnuts or coconut flour

 

Preparation:

To prepare this vegan balls, it is best to use the blender, but if you do not have it you can use the food mixer.

Put cheese in the blender and gradually add sugar. When these two ingredients are evenly mixed, add the dark chocolate that you have previously melted. The mixture in the end should be dense. Leave the mixture in the refrigerator to cool down for 2 hours. When the mixture has cooled, shape the balls with your hands and then roll them into ground almonds, fruits or coconut flour. Perhaps if you like you can add all three ingredients this way balls would look more colourful.

 

Our Proposal No 3. BANANA MUFFINS

Ingredients you will need for this recipe:

  •         100 gr of oat flakes
  •         100ml of water
  •         100ml of almonds or soy milk
  •         150gr of integral flour
  •         50g of unrefined sugar
  •         ½ a teaspoon of baking  powder
  •         ½  a teaspoon of cinnamon
  •         Pinch of salt
  •         2 ripe bananas
  •         50ml of coconut oil

 

Preparation:

In a bowl mix the oat flakes, integral flour, sugar, baking powder and cinnamon.  When all ingredients are well mixed, pour water, milk and oil and stir. Later add into the mixture 2 peeled bananas. Fill the muffins moulds and bake at 180 degrees for 20 minutes.

To decorate muffins, we suggest to sprinkle oat flakes and a drizzle of honey.
